Single origin coffees offer a unique flavor profile distinct from blends due to factors such as climate, altitude, and processing methods. What is Exceptional Coffee?

The quality of coffee is assessed on a scale from 0 to 100, as established by the Specialty Coffee Association. All coffees that we carry are guaranteed 80 points and above. Our goal is to provide an exceptional experience, whether you're savoring an 80-point or an 87+ point coffee.

    Commercial-grade coffees are those that receive a quality score below 80 points.

How to Brew Great Coffee

Pour Over

Coffee brewing equipment:

  • Pour-over brewer (Kalita Wave, Oxo, V60)
  • Carafe (Kalita Server)
  • Filters (Kalita Wave filters)
  • Gooseneck Kettle
  • Scale (Hario Scale)
  • Grinder (Baratza Virtuoso or Encore)
  • Filtered water

Ingredients:

  • 15g fine ground coffee (Baritza Encore, grind size 15)
  • 250g hot water (212°F/100°C)
    A pinch of excitement
    Instructions:
  1. Rinse the filter with hot water and discard the rinse water.
  2. Add 15g of ground coffee to the filter, creating a small well in the center for even saturation.
  3. Pour 30g of water over the coffee to fully wet the grounds. Allow them to bloom and release their flavors.
  4. Immediately swirl the vessel to mix the coffee and water thoroughly.
  5. At 00:45, pour water until the scale reads 150g.
  6. At 01:15, pour water slowly and steadily until the scale reads 250g. Complete this step within 30 seconds.
  7. At 01:45, use a spoon to stir the brew once clockwise and once anti-clockwise, embracing the magic of the flavors.
  8. At 02:00, give the vessel another gentle swirl, letting the brew settle and reach perfection.
  9. Allow the coffee to brew for 2 minutes and 20-30 seconds, revealing its enchanting qualities.
  10. Pour the brewed coffee into a cup and enjoy.

Aeropress

Ingredients:

  • 15g of coffee, ground medium-fine
  • 225mL of hot water (195-205°F)

Instructions:

  1. Rinse the AeroPress filter with hot water.
  2. Add the ground coffee to the AeroPress chamber.
  3. Pour 100mL of hot water over the ground coffee and stir for 15 seconds.
  4. Add the remaining water and stir gently.
  5. Place the AeroPress cap on and flip the AeroPress over, placing it on top of your mug.
  6. Slowly press down on the plunger for 30-45 seconds.
  7. Enjoy!

Tips:

  • Use fresh, filtered water.
  • Grind your coffee beans just before brewing.
  • Preheat the AeroPress chamber by rinsing it with hot water before adding the coffee and water.
  • Stir the coffee and water vigorously for 15 seconds to create a good bloom.
  • Apply gentle pressure when pressing down on the plunger.
  • Experiment with different grind sizes, water temperatures, and brew times to find your perfect cup of coffee

French Press

James Hoffman Method

  1. Prepare your equipment. You will need a French press, a scale, a timer, and a spoon.
  2. Grind your coffee beans. Use a coarse grind, similar to the consistency of sea salt.
  3. Heat your water. Bring your water to a boil.
  4. Add the coffee grounds to the French press. Use a ratio of 1 gram of coffee for every 18 grams of water.
  5. Pour the hot water over the coffee grounds. Stir gently to combine.
  6. Start the timer. Let the coffee steep for 4 minutes.
  7. Stir the crust. After 4 minutes, stir the crust of coffee grounds that has formed on the surface of the water.
  8. Scoop off the foam. Use a spoon to scoop off any foam or floating coffee grounds.
  9. Place the plunger on the French press, but don't press down yet. Let the coffee steep for an additional 5-8 minutes.
  10. Gently press down on the plunger. Don't press all the way down, as this will stir up the sediment.
  11. Pour your coffee and enjoy!

Coldbrew

  1. Grind the coffee beans coarsely. A good ratio is ¾ cup of beans per 4 cups of water.
  2. Add the ground coffee to a large container, such as a French press or pitcher.
  3. Pour cold water over the coffee grounds and stir gently to combine.
  4. Cover the container with cheesecloth or a lid.
  5. Let the coffee steep at room temperature for at least 12 hours.
  6. Strain the coffee through a fine mesh sieve or coffee filter.
  7. Serve the cold brew coffee over ice or with your favorite additions, such as milk, cream, or sugar.
